Season of Soup

Brrrrrrr Sweets!

Last weekend I was in Tucson wearing shorts and this weekend I am freezing my apricots off!!! We got our first snow fall this weekend and the change was a nice surprise.



I woke up Saturday morning to fresh snow and a clear sky. Why yes, it was a perfect day to go grab some coffee at the local Starbucks.


Once the coffee kicked in, HM and I had the energy to tackle the final photo shoot for the 2012 Buckley calendar......yes, you read that right......we are "those" people. You know, the ones that don't have kids so they go to great lengths to take photos of their dog and then order personalized keepsakes from Shutterfly. Awesome right? Put your orders in now sweets because the 2012 Buckley Calendars are expected to sell out quickly.

Not everyone involved with the photo shoot was having a good time....





He will get over it. To end our snowy weekend right, I decided to make some soup. Um, it was AMAZING!!! It was the fastest soup ever and it was absolutely delicious. I highly suggest this meal on a busy night sweets. It took me under 30 minutes to make it. I got the recipe from this month's Runners World. For those of you who don't have a subscription, I will provide the instructions.

Step 1: Wear a super cute apron over your gym clothes to hide the sweat.



Step 2: Saute half an onion and one clove of garlic in your pot with some olive oil until tender.

Step 3: Dump a 28oz can of fire roasted, crushed, tomatoes in the pot and bring to a boil.

Step 4: Add 1 tsp of sugar, 1/2 tsp of salt, 1/2 tsp on pepper, and 1/3 cup of water.



Step 5: You have the option to dump everything in a blender at this point if you want a smoother soup.....I did not.

Step 6: Add a 12oz can of drained chickpeas in and simmer for 10 minutes.

Step 7: Spoon soup into bowls and top with pesto. ENJOY!!!


It makes about 5 hearty bowls. I cannot wait to have it again tomorrow for lunch. It was so much better than the canned tomato soup I originally had packed for tomorrow's lunch!!!

Later this week, I will let you how my sausage and mushroom soup turns out. THE SEASON OF SOUP IS UPON US!!!!!
