Tomato Towers On Date Night

Good Morning Sweats!

I can't tell you how excited I am that the weekend is here. This week was a little rough on me. I have been sick and running around non-stop- both at work and after work. I welcome this Saturday morning so much I might even do a sun salutation or some other non-sense yogi thing.

Before I fill you in on what I am up to today, let me tell you about my evening last night. HM so handsomely suggested that we ride our bikes to the farmers market and get everything we would need to cook a dinner at home. It was the last farmers market of the year and we had been meaning to do this all summer so I quickly agreed!

We grabbed a mint limeade as soon as we got there and began the hunt for dinner. We ended up getting a top sirloin beef, cheddar bread, cool looking "green" beans, and heirloom tomatoes sold by the cleanest looking vendor there. We also bought a fudge brownie from a lady, who from the looks of things, takes her quality control process very seriously.

That big sucker in the above photo was the base layer, followed by a fresh basil leaf. Next I stacked a slice of each of the remaining tomatoes, sprinkled with gray sea salt, and topped with shredded basil. Although not pictured, I made a simple balsamic reduction for the finishing topper.

I am not sure what kind of "green" beans these were but they were fantastic!

Good thing I carbed up last night because HM and I are spending our morning volunteering at Touch a Truck. It is a Jr. League of SLC event where families and their kids can see trucks, tractors and more close up. If you are in the Salt Lake City area, head on down today from 10-2pm for a fun time!!!

The proceeds raised from this event go to the Jr. League of Salt Lake- an organization committed to improving the lives of women and children. The league is instrumental in providing services to those less fortunate.
