Good Morning Sweets,
Last night I was in the mood for something "fresh and summery" for dinner. Since making gazpacho seemed too hard, I went with bruschetta. Lori's photos from It's A Sweaty Life may have inspired my decision.
First, I brushed the bread slices with olive oil and got busy toasting them.
Then, I cut up the tomatoes, fresh mozzarella, and basil. I made a balsamic reduction sauce by heating some balsamic vinegar in a sauce pan. To do this at home, put twice the amount of balsamic as you want to finish with (it will be reduced by about half) and add a spoonful of sugar. Heat on high and stir briskly too avoid burning. Once it has a syrup quality you can remove it from heat and let it cool.
The finished product was amazing. I replaced my mozzarella with goat cheese, but HM stuck with the more traditional choice of mozzarella.
Side note: We have Fiestaware dishes and have a million colors thanks to the MIL. Here is a fun fact about me. I avoid the red plate and bowl like the plague. I think I red (haha get it?) once, probably in Cosmo, that the color red makes you eat more. Since then, I have always avoided red dishes, table clothes, etc. I thought the bruschetta looked best on the red plate though, so I did this for you sweets....I hope you are happy.
From last weeks poll, where I asked you what clothing item you would most likely buy if handed $150, you sweets went the classy route. 62% of you would use the money to buy a dress. Nice, totally worthy of my balsamic reduction. 12% said jeans and 23% said workout clothes. Maybe all you sweets are sick of replacing your running shoes, because no one voted to spend money on shoes.
